Mace is the dried “lacy” reddish covering or aril of the nutmeg seed. Mace are collected from East Indonesia, from Northern Sulewesi and in the Maluku islands and handpicked for exports. Mace has a delicate flavor and is often preferred in light dishes for the bright orange, saffron-like hue it imparts.
