Cardamom

Cardamom is the world’s third most expensive spice by weight, outstripped in market value only by saffron and vanilla. Cardamom has a strong, unique taste, with an intensely aromatic fragrance. It is the dried, un ripened fruit of the plant. Cardamom is best stored in pod form, because once the seeds are exposed or ground, they quickly lose their flavor. The fruit capsules, green in colour, which are collected just before maturity. In India the cardamom is cultivated in the Western Ghats. The bulk farmer grade is the mixer of all sizes. It is manually cleaned and sorted by machinery into different sizes. The cardamom pod diameter is from 4mm- 11mm and it is sorted normally to four different ranges of sizes.
